Almond Coconut Butter

When stars align in just the right way, you can discover phenomena that might have otherwise been invisible or unknown.
A few years ago, we learned through a mutual friend that world famous Arlington, VA-based ultra-marathoner Mike Wardian not only had a Vizsla, Rosie (@rosievizslaruns), but also counts almond butter as one of his all-time favorite foods. We looked Mike up online, and his running resume was impressive to say the least. Beyond his world-class athletic achievements, he also seemed to be a kindred spirit, staying busy breaking paradigms doing something he loved. I sent Mike an email to introduce myself and Big Spoon Roasters, and by coincidence, Mike had recently heard of us while looking for a great-tasting, all-natural almond butter. We sent him a few jars to try, and before we knew it, Mike and Rosie became our good friends, and we joined the likes of Hoka One One and Sweetgreen as one of Mike’s official sponsors. Since then, Mike has broken several world records, including the World Marathon Challenge, which consists of 7 marathons in 7 days on 7 continents (!). Most recently, Mike was the overall winner at the 2017 Big Sur Marathon, and posted the fastest time of the year in the Boston to Big Sur Challenge.
Mike’s favorite go-to varieties are our Mission Almond Butter and Almond Ginger Butter, and he eats one or both daily. Since we’ve known him, though, Mike has gently but enthusiastically suggested we create his “dream” nut butter, with fresh-roasted almonds and coconut as the central ingredients. I immediately loved the idea, and it was just a matter of zeroing in on what a Big Spoon Roasters take on “almond + coconut” would be. Not to put too fine a point on it, but when we make a nut butter, every ingredient has to shine brightly with intensity. Flavors and textures must also be in balance with one another, complementing and never drowning each other out.
We’ve spent the last six months exploring different ingredients and recipes in our test kitchen, and have fine tuned an almond + coconut butter that is worthy of the Big Spoon Roasters name. Thankfully, Mike and Rosie give our new Almond Coconut Butter their stamps of approval. We hope it becomes one of your new favorites, too!
Our Almond Coconut Butter is handmade from fresh-roasted heirloom Mission variety almonds, crispy toasted coconut flakes, raw organic coconut crystals, and hand-harvested sea salt to create a decadent, naturally sweet, irresistible nut butter reminiscent of homemade coconut macaroons.
Jamnation In the Limelight Strawberry Seascape Jam with Key Lime

Local, seasonal fruit is, quite literally, Jamnation founder and chief jammer Gillian Reynolds’ jam. Hailing from three generations of chefs and food retailers, the native New Yorker turned Californian was born into the food world. During a trip to Brazil after grad school, she was blown away by the complex flavors and textures she found in the country’s panoply of fresh, simple fruits. She quickly realized that not all fruits were created equal, and that small, local farms usually created better-tasting, more sustainable harvests.
Upon returning to San Francisco, she was determined to find the same intensity of flavor in local, organic fruits from small Northern California farms. Her desire to share these exquisite fruits with friends & family back home in NYC inspired her to create small-batch, handmade jams. From these recipes, Jamnation was born.
Her idea was to create bright, bold jams with pure, carefully sourced ingredients. We think she’s done this quite well! Jamnation’s preserves sing with beautiful flavors and luscious textures, pairing wonderfully with our fresh-roasted, coarsely milled nut butters.
Gillian's jam recipes started as gifts to her family; each one references a specific memory she shared with a particular family member. Her "In the Limelight" strawberry jam is one of those originals and was a gift to her mother. In Gillian’s words, “It is an ode to the strawberries that we ate during summers I spent in Bucks County, Pennsylvania, as a child. My mother was obsessed with these strawberries; they were only available for a few weeks every year and she made strawberry shortcakes, tarts… you name it.”
In California, Jamnation uses Seascape variety strawberries because they are a bit more tart and hold up better to cooking, leaving gorgeous whole strawberries in the finished jam, which cooks down in a three-day process to create its lush texture.
For each jam, Gillian also tries to find a secondary flavor that complements the primary fruit. Since many strawberry preserves tend to be cloyingly sweet, she chose citrus for this jam, using both the zest and hand-pressed juice of Key limes to provide an addictive balance of acid and sweetness. In the Limelight may have started as a gift to Gillian’s mother, but it is now her father’s pick for PB&J’s - one of his favorite midnight snacks.
